Pancakes

We love breakfast in our house.  No, I mean we LOVE breakfast.  My boyfriend was raised with an older-ish father who did breakfast to the 9’s.  He fresh squeezed orange juice, they had cereal, toast, eggs, bacon, sausage and fruit.  So, when I say we love breakfast, we really do.

To help win him over, I learned quite a few breakfast recipes, not all of them very healthy, and this is honestly one of the best.  These pancakes have a small cinnamon flair, hint of vanilla, and are light and fluffy and one of the best ways to start your day.  The dry ingredients are easy to mix together and keep around if you need, and you probably have most of these in your house already.

My flair on this is simple, just to give it a sweet and spicy flavor you’d want to start your day with.  The cinnamon I use is Saigon Cinnamon (thank you Costco) and always use a hint of Good Vanilla (Ina Garten in anyone else’s mind when you hear that)?  If you are thick pancake fan, use less milk, if you like those thin ones that you can eat a dozen of use more.  These are simple to make your own, but the downside is, you will never want the box again.   When my boyfriend wakes up wanting a hearty breakfast I’ll make these and some eggs and we can go on a ridiculously long hike.  If you want to be a that rock star parent, make these with bacon in the morning after a sleep over day and all your kid’s friends will brag how great your food is.  Enjoy!

Course Breakfast

Ingredients
  

  • 1 ½ cups all-purpose flour
  • 2 ½ tbsp sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • ¼ tsp vanilla
  • 1 ¼ cups whole milk
  • 2 large eggs
  • ¼ cup butter (half a stick)

Instructions
 

  • Mix dry ingredients in a large bowl.
    1 ½ cups all-purpose flour, 2 ½ tbsp sugar, 2 tsp baking powder, 1 tsp baking soda, ½ tsp salt, ½ tsp cinnamon
  • Melt the butter in a coffee cup in the microwave (15-30 seconds most, melted not bubbling).
    ¼ cup butter
  • Crack eggs in a medium bowl and lightly whisk, add milk and vanilla and set aside.
    1 ¼ cups whole milk, 2 large eggs, ¼ tsp vanilla
  • Add egg mixture to the dry ingredients and lightly whisk, add butter and mix until there are no bumps. Batter should be easy to whisk, with very little resistance.
  • Heat a non-stick pan on the stove on medium/medium low heat (I do a 4 out of 9 on my stove).
  • Put a little bit of butter in pan until butter is melted.
  • When pan is hot and butter is melted, add about a quarter cup of batter to the pan.
  • Here is the tricky part, when to flip. Wait till the pancake has little bubbles on the outside (don’t be shocked if your first pancakes doesn’t turn out, first is usually a dud). When you see the bubbles (about 2 minutes+), flip pancake.
  • Second side takes about 60 seconds to 90 seconds to be done. You want golden brown, not pasty brown.
  • Repeat until all pancake batter is used.
